Well my whirl wind tour of 5 states in 3 weeks has started and after reaching the SA border and now the NT border it was time to locate a few caches here or there as I won’t be doing that much caching on this trip as I’m with muggle friends.
We have finally reached another spot where we are staying for 4 nights this time to really enjoy the sights of Litchfield NP.
So after another casual night I got up early and headed off to Darwin for the day to find a select few caches and others as well.
Darwin just seems the same as from when I was last except the roads are getting better.

Batchelor to Humpty Doo staying in the CMCA camp for 3 days
We had a few finds on the way, stopping where we could with the caravan on.

Travelling with richlink on a trip from Perth to Darwin and return via Alice, Adelaide, and the Nullarbor. Found on our first day in Darwin. TFTC.

AngelG27 and I are finally in Darwin from Canberra for the weekend. This trip was originally booked for August 2020, so we are finally using up our travel credits. Today's focus was counties from Darwin to Katherine. A quick find here. Left TB. TFTC.

It's been awhile since we have been caching and this was a nice easy one for us. TFTC
Another stop on our way between Katherine and Darwin, using the caches as a reason to stop and stretch our legs. Here's a nice cheesecake recipe to use those mangoes up ......................
Ingredients
BASE:
▢150 g / 5 oz Arnott's Marie Biscuits (17 crackers), or digestives, Graham Crackers or other plain sweet biscuit
▢100 g / 3.5 oz unsalted butter , melted
▢2 tbsp white sugar
MANGO:
▢700 g / 1.4 lb mango flesh (2 large mangoes) (Note 1)
FILLING:
▢4 1/2 tsp gelatin powder (Note 2)
▢1/2 cup / 125 ml cold tap water
▢500 g / 1 lb Philadelphia cream cheese, softened (2 blocks)
▢2/3 cup / 150g caster sugar (superfine white sugar)
▢300 ml / 10 oz whipping cream*
MANGO JELLY:
▢3/4 tsp gelatin powder (Note 2)
▢1/4 cup / 65 ml cold tap water
▢1 tbsp lemon juice
TOPPINGS (OPTIONAL):
▢300 ml / 10 oz whipping cream*
▢1 tbsp white sugar
▢1 tsp vanilla extract
▢1 large mango, cut into cubes
▢2 passionfruit
Instructions
CAKE PAN:
Use a 22 cm / 9" springform pan (or similar size). Turn the base UPSIDE DOWN (for ease of removal later).
Place a square sheet of baking paper on the base, then secure in springform pan (see video) with excess paper hanging out sides.
Grease sides with butter and line with paper.
BISCUIT BASE:
Blitz crackers into fine crumbs in a food processor.
Add butter and sugar, blitz until combined. Pour into prepared cake pan. Press down firmly - base only, not sides.
FILLING:
Put water in a heatproof bowl. Sprinkle gelatin over surface (don't dump in centre). Stir to partly dissolve. Set aside 5 minutes - it turns gelatinous.
Microwave 15 seconds on high x 2, stirring in between. Stir until dissolved (few tiny specks ok). Cool 5 minutes.
Place mango in food processor. Blitz until smooth.
Measure out 3/4 cup and reserve for mango jelly, set aside.
Add cream cheese, cream, sugar and gelatine mixture into food processor (2.5L/2.5qt/10 cup+ capacity - Note 3). Blitz for 30 seconds or so until smooth.
Pour into cake pan. Refrigerate 3+ hours until top is set.
MANGO JELLY:
Pour water into bowl, sprinkle over gelatin. Leave 5+ min. Microwave on high 2 x 10 sec, stir well until granules dissolved. Set aside 5 minutes to cool.
Place reserved mango puree (from step 4 under Filling) and lemon in a bowl. Pour over gelatin and whisk well.
Pour over cheesecake filling. Tilt cake around to spread.
Refrigerate 12 hours+.
Release pan sides, then use overhang paper to slide cheesecake onto serving plate. Then slide the paper out from under the cheesecake.
DECORATIONS:
Place cream, vanilla and sugar in a bowl. Whip until the cream is softy whipped.
Piled over the centre of the cheesecake.
Top with more chopped mango and passionfruit pulp. Serve and relish in praises!
Recipe Notes:
* Any cream that can be whipped is fine to use here. There are some creams which are for pouring only. The tub should say if the cream is for whipping.
1. You'll need 3 large mangoes for this recipe - 2 for the Filling / Jelly topping, and 1 for decorating. Or you can use 450ml / 15 oz mango puree (this is what 700g / 1.4 lb fresh mango purees into, ie volume pureed is less than the weight).
I really like using Honey Gold mangoes for this because the flesh is a beautiful intense deep orange colour and it's really sweet. But any mango will work - as long as it's ripe! (Tip: Calypso mangoes which are prob the most mass produced / best value here in Australia look beautiful on the outside but are the least mangoey )

TFTC I hadnt realised I didnt quite have completed the whole series, so a nice find today.
We've enjoyed our stay in Darwin and exploring the different locations. This is one of the caches we targeted and found. Heading south now. New log scroll added.
Stopped here with ilook4geo and found this cache which proved to be easy enough to find. Signed log with both names and replaced all where found. Best of all are just plain mangoes. Thanks go to smoink for placing this cache.

Found this one on the trip from Batchelor to Jabiru. Getting the caches done super early in the morning really helped with the heat. The humidity is insane but it’s really when the sun is beating down on you that it’s hard going. Thanks for placing these caches TFTC
Today was an adventure down to Litchfoeld NP for the next leg in the Great Aussie Icon Hunt. It started off soooo good, until we got to about 8 klm from the turnoff and we hit the roadworks, blocking off both sides of the road and using traffic lights to control. 1 and half hours later we get to the turn off, passing about 5 caches due to the bumber to bumber traffic.
Picked up a few and also a couple of DNF's, but all good when we got to the Bitter Springs Tavern for lunch 3pm, and a cooling ale.

Good cache! Did this one with no gps help, was a fun race between the wife and i converging on the cache at the same time.
Over from Perth to enjoy Darwin for a few days Today was a drive down to Litchfield NP with a few caches on the way... and a few on the way back This was one that I stopped off at, and another mango recipe stored away Tomorrow I am heading down to Adelaide River so hopefully I might just be able to complete the WFTM & MM series No problems here, it was another quick find. Thanks for placing these to break up this stretch of highway TFTC
Found after a short search. Found it was easier to use GPS rather than phone due to coordinates jumping around on phone. TFTC

Last find for the day - Easter Sunday caching with a different kind of 'egg' hunt! Out n' about with DeFCoN_6, we decided to head to Adelaide River and complete a series of caches. We managed 25 inc. 1 DNF this being our 25/25

Back in the Northern Territory heading up to Darwin. Caching along the way, makes our journey interesting, and the stops are great to have a stretch as well. This new little series have popped up since we were last here, so decided to get as many as we could on our way. Thanks smoink for placing and maintaining these caches for our enjoyment. We love mango, so the recipes are a bonus:-)
Today we targeted this series and started off doing the first of the series "Mango Madness" and collecting the required information for the mystery cache as we headed back towards Darwin.
